Corn Muffins




Corn muffins are the best.

Spread with unsalted butter, fresh from the oven, they can't be beat.

As I've previously shared, I cheat and use Jiffy corn muffin mix  to which you add one egg and a third of a cup of milk.

However, I always use  two boxes so double on the eggs and milk.

I also add a can of creamed corn! 

It helps make the muffins moist and delicious!

There is always a little more mix than fits in the 12 muffin pan so I just pour the leftover amount in a heart shaped ceramic dish. 



The result?  Yummy.

  1. CAn't beat Jiffy and I too use two boxes and then make Texas sized muffins. Never thought of can corn! Must try.

  3. I use Jiffy mix also and love it. I might try it with the added can of creamed corn sometime. YUM!

  6. I never thought about adding a can of cream corn - and if you let it set about five minutes it will expand even more.

  9. I always made Jiffy corn muffins when my kids were young. When it was almost time for the school bus to arrive, I would pop some in the oven so that they would be coming out piping hot just as the kids came in the door. I would make a cup of tea for myself and we would have them with butter and raspberry or strawberry jam. Yum!

  10. Oh, these muffins look so good. I absolutely love corn bread and chili, one of my favorites. My favorite muffin is probably blueberry.
