Breakfast Is an Easy Meal



During the busy holidays, I'd love to entertain more but there's not much time. It takes quite a bit to plan a dinner for guests. There's all the ingredients to buy, wine to select, blah blah blah

Breakfast is easier.

One busy Dercember Sunday, I scrambled together more than eggs! Invited three guests and set the table with a red cloth and my favorite Christmas tree dishes.

Whipped up eggs with half and half  and sprinkled a tad of nutmeg in them. Sauteed some mushrooms and poured the eggs over them. Added about a cup and a half of shredded white cheddar cheese. Folded the whole shebang over and voila! Omelettes! Made beans and rice, too, a Latin favorite combination, along with tortillas.



Oh no! No orange juice could be found in the refrigerator so slice, slice, slice went the kitchen knife. Sliced oranges and a few fresh raspberries made a nice fruit plate.

Coffee anyone?

  2. A lovely breakfast! And your table is so pretty. My new Christmas teapot matches your Christmas tree china. It was my "find" this season at Goodwill. I will think of you when I use it.

    My favorite breakfast --- crepes with blueberry sauce. Errr, no, maybe it's waffles with strawberries. Oh, I can't decide --- but I agree that breakfast is a wonderful meal for entertaining.

  4. Oh lovely, Susan. It isn't the food that makes the memory but the shared experience. Looks like you did great with both!

    Egg and sausage casserole is one of my favorites...I have a sausage and cheese muffin too that is very unique and reserved for special events.

  5. Looks wonderful, Susan. I wish I enjoyed making breakfast for guests. I can't ever seem to get it all on the table at the right time. Probably because I attempt to do too much ... fried eggs, biscuits, bacon, sausage, grits, tomato gravy (all those things Southerners love!). My mother is the queen of breakfast, though. I didn't get that gene. ;)

  6. My friend has the same set of dishes. I remember how family and friends added to her collection every year until she had a service for 16.

    My favorite breakfast is two sunny side up eggs, crispy hashbrowns, and toast. Yum!

  8. Blueberry pancakes with syrup..yummy..that is my favorite plus I love French crepes.
