Lighter Supper Meals


Once, I heard the expression to eat like a king in the morning, a queen at lunch and a pauper at night.



It makes sense.

If we have a big meal at night, it just sits in our stomachs the whole night through and, I would imagine, could also contribute to weight gain.

So lately we've been having our bigger meal either at lunch or in mid-afternoon (the days we are home).

We have been eating lighter meals at night.

 


One night recently, I made cheese and tomato sandwiches and served a nice salad with Boston lettuce, chopped watercress and arugula.


For the dressing, I made a recipe similar to one by Rachel Ray.







I grated one lemon, added lemon juice and olive oil,  a little bit of chopped garlic, some chopped onions, a tad of sugar, salt and pepper. 

So delish.

Can't be beat.

  1. Sometimes I enjoy have breakfast for my evening meal, and that doesn't mean anything more involved than a scrambled egg and toast. Also, a salad is always a good choice. I love adding Feta cheese, dried cranberries, and walnuts. Oh! Can't forget the red onion!

  5. Oh, that tomato & cheese sandwich sounds delicious to me--right NOW. (Unfortunately, my eating "window" is closed.....) I am going to try a dressing similar to that soon, too.

    For over a year and a half, we've been confining our eating to a 5 hour window each day (with 19 hours "fasting" in between). That means we eat our largest meal around 1:30 and then around 6:00 decide if we want a sandwich, fruit, snack, etc.

    It's different, I know. But it has worked well for us and helps us keep weight off - PLUS I don't have to constantly be planning, preparing & cleaning up for/from meals :)

  6. I've made a lot of salads for supper and sometimes just fruit and cheese. We always have our big meals on Sunday's with lighter meals at supper.

  7. Homemade soup is number one on my list. But for dinner I just had oatmeal with soymilk, a little bit of brown sugar and cinnamon, dried cranberries, chopped pecans and and glass of orange juice. Yummo! Have a great week. Tammy
