Pumpkin Nut Bread



With the holidays coming fast and furious, it's always good to have something made and stored in the freezer for drop in guests or  to give as little gifts.



Since there was a big can of pumpkin in the pantry, I decided to get ahead of the rush and make some pumpkin nut breads.


Because the recipe called for 15 ounces of pumpkin, and I had a can of 29 ounces, I doubled the recipe.

That made a lot of batter so I had to scarf up every pan available!



The recipe stated it the world's best pumpkin nut bread recipe but it wasn't or at least not in my opinion. 


The breads will taste good toasted or spread with honey butter. 

Come to think of it, a little creamcheese with maple syrup mixed in would be good, too!


The loaves are now wrapped in aluminum foil in the freezer.

  1. I do not care for anything made with pumpkin ..my favorite is banana or date nut bread..those are really yummy and you don't need anything for a topping.

  3. Pumpkin is great in muffins and spice loaves. Too bad your recipe wasn't quite what you'd hoped. I like pumpkin loaves myself or banana bread.

  5. MMm they look delicious and would certainly feed a crowd. I love having plenty in the freezer too for emergencies. I baked 3 loaves of seed bread, 2 tea cakes and a dozen scones today. Son and grandson polished off the scones when they popped in for a cuppa. Lucky I froze a tray full ready to be cooked in a jiffy.
    The tea cake is like a fruit bread and is so easy to make. I'll post the recipe this week. xx

  6. I love lemon poppyseed, but pumpking nut is a close second. Yours looks yummy. My problem is, I would eat it daily.

  9. I can't believe you said that they weren't good - they sure look good. Ever see the butter than come with some cinnamon and sugar in it? I bet that would just taste awesome.

    My favorite is pumpkin bread too.

  10. I am a Banana Nut Bread gal! Love other kinds also but that is for sure my favorite. I like pumpkin bread soemtimes. Sorry this wasn't a great recipe. Still it looks good!

  11. I have to confess I love pumpkin bread! It is my favorite. Your bread looks yummy....sorry it wasn't what you were hoping for! Hoping for a new freezer for next year. Need to have things on hand as you do.

  14. This looks delicious, Susan. I love anything pumpkin this time of year. My favorite sweet bread would probably be banana nut bread. Sometimes I put chocolate chips in it.
