A Simple Summer Supper


While baking and cooking are usually creative and happy tasks, sometimes I just get plain sick of doing them.

It's challenging to come  up with new dishes that are satisfying, healthy, economical and tasty.


Recently, I put some chicken thighs in a square casserole that had been coated with cooking spray.

Added some onion powder, salt and pepper and popped them into the oven.

Meanwhile, I made a quick white sauce with butter, flour, milk, salt, pepper and a dash of cayenne pepper.

When the sauce was thick, I mixed some dried marinated tomato strips into the sauce.


Then,  the chicken pieces were added to the sauce.

Small potatoes were boiled on top of the stove until they were tender.

Little baby cucumbers, found at a farmers' market, were sliced. I mixed vinegar, olive oil, salt and pepper and a tablespoon of sugar together and poured them on top of the cukes. 



That's  how my maternal Grandmother served them and I always loved them that way.  

You know what?  The whole dinner turned out really delicious.

  3. Well when I don't feel like cooking I don't. I either get take out or go someplace to eat or put a frozen meal in the microwave.

  4. Order out. :) I don't mind cooking, it's the washing of dishes that I don't always like. I make simple dishes that don't take a lot of time and tend to make some of the same ones over and over. My family son isn't always pleased. I don't think he ate any of the squash & black bean chili yesterday and let me tell you, it was yummy. :) Have a fab Friday. Tammy

    Your food looks good - love the white sauce and it is so easy.

    And the cukes too - ever put them in sour cream and milk? Good too.

  7. Looks very yummy. I get tired of cooking too. Jim BBQ;s a lot in summer and we have a veggie and salad. I'm a happy camper with that!

  9. Sometimes when we have been doing yard work all day or have been away for the day and just can't bear the thought of cooking supper, we have oatmeal. A little brown sugar or honey and some walnuts or berries and you have a very healthy and filling meal. Then it's time for a good nite's rest.

    Your meal looked delicious. Sometimes the spur of the moment meals that use whatever is on hand are the best. Sounds like this one is a "keeper".

  10. This dish looks so delicious, Susan. I know what you mean....sometimes I don't feel like cooking if I've had a hectic day, and once a week I go out with my son and get a bite to eat and catch up on the happenings of our lives. This butter cream sauce looks yummy. I'll have to try that sometime.
