Some foods we ate as children remain life-long favorites.
My late father used to make potato pancakes that our whole family loved.
In my mind's eye, I can still see him peeling potatoes in the kitchen.
The pancakes are very time-consuming to make.
After he'd run each potato numerous times along a grater, he mixed in eggs, a little flour, and salt and pepper.
As soon as the pancakes were dropped into hot grease and turned, he'd put them on a platter.
Within a second, they'd disappear. He couldn't make them fast enough.
The past few days I have been laid low by a bad head cold and respiratory difficulties.
One of my sisters said she was coming over with supper, since most of my time was being spent beneath a blanket.
One part of the kindly delivered meal was potato pancakes.
It made me think, right away, of my father, who has been gone from this earth for 36 years.
They tasted quite yummy but the memories they stirred up were more precious.

Oh, I remember these potato pancakes. They look so delicious, Susan, and it was thoughtful of your sister to bring you some when you are feeling under the weather. Having this memory of your dad makes these pancakes even more special. Feel better, my dear Susan.

**one of my favorite childhood foods was the homemade enchiladas that my mom made. The kids carried on with the recipe and now make them in their own homes. : )
Chocolate mayonnaise cake, we grew up with it. Always moist with a dark chocolate flavor, you wouldn't know it had mayo in it.
