Breakfast Burritos and More!


Sometimes it's nice to have a change from morning cereal.


When we lived in the southwest, I used to love to go out to breakfast and order burritos.


They consisted of large white flour tortillas filled with bacon, eggs, potatoes, onions and so forth. Mmm mmm mmm


So one day not too long ago, we had burritos made at home.  I chopped up red and green peppers very finely and cooked them in a little bit of olive oil.

Then, I added packaged hash brown potatoes. When they were cooked, I stirred in eggs mixed with a little half and half.

This time I left out onions at my daughter's request but usually I'd add about a cup, finely chopped.


When everything was gently cooked, I sprinkled about a cup of shredded cheddar cheese on top of everything in the frying pan. 




Then I put the mixture into warm tortillas and folded them over.

Beans cooked in the crockpot and whipped smooth in the food processor accompanied the burritos.

 I also added a plop of sour cream to the beans and a dash of our favorite salsa, Herdez. It's really the best tasting salsa one can find that is the closest to real Mexican salsa.


We also had fried platains (platanos) and crisp bacon. I put the bacon on a cookie sheet the previous night and cooked it slowly in the oven, set at about 275 degrees. 


Then, I placed the cooked bacon on paper towels and popped it  into the refrigerator overnight.

Next morning, back into the oven the bacon went. It's always nice a crisp when cooked this way.

Gee whiz, didn't mean to take up  too much of your time with a post this long but I wanted to tell you all about our breakfast burrito meal!

I usually don't eat a big breakfast - but it looks good. I try and love to eat oatmeal every single day. lol sandie

I do not love flour tortillas at all. But I love everything else in your breakfast. After a substantial breakfast like that you don't probably get too hungry during the day. Hoping you have a lovely weekend.

This looks extra good this morning. Such a fun meal too. I like southwestern but not hubby so much. In a samll NM town, we stopped for breakfast at a very local place and I had huevos rancheros. He could not imagine eating smashed beans and red chili for breakfast! Good....

Pretty fancy breakfast burrito. You can get them at a fast food joint here and they are like most of the fast food - not very healthy and not very good.

We don't very often have tortillas here, yet we do have a substantial breakfast every morning. Yours looks amazing!

I love burritos and do make breakfast one's occasionally. Not as 'fancy' as yours! I like eggs,onion, cheese and salsa on mine! Hugs, Linda

I am mad crazy for burritos. I just recently made a recipe with pot roast in the crock pot that had the delicious seasoning of a good restaurant burrito. Your breakfast burritos look top shelf. Nothing like a good breakfast to get you going for the day.

It's nice to do something different ever once in a while. Do you get Amy's products there? They are organic and vegetarian but they do breakfast burritos that you can heat in the microwave and they are really very tasty. I have liked every single frozen product of their's that I have tried, from the vege pot pie to the ravioli. Yum! Things will be quiet in my corner as we are travelling tomorrow. Both my son and daughter would have LOVED to have been at your house for that kind of a breakfast.
