Supper on-the-cheap

 
Going out to eat is fun and adventurous but it can also be expensive.

I don't know about you, but sometimes I get really sick of cooking. 

The day to day monotony of it sometimes wears on my nerves.




Last night, I would like to have gone out to dinner but the thought of spending a lot of money just to have someone else cook for us was unappealing.

 I started looking in the refrigerator and on the counter in the kitchen.

It was time to do some thrifty (and fast) cooking.

First of all, I had some leftover hamburger meat so that got lightly fried. Added a half a package of low sodium taco seasoning.



Then, I fried two tortillas in vegetable oil until crisp  and drained them on paper towels.


Next, I cut up a couple dozen grape tomatoes and sprinkled them with onion salt before slicing up two avocados that sat on the counter.


Then I grated some cheddar cheese.

Piled the hamburger meat, tomatoes, romaine lettuce leaves, cheese and avocado slices on top of the crispy tortillas and gave a dollup of light cream.



Dinner was pretty tasty, filling and cheap, having used ingredients that were already on hand.

Today we are joining Linda at A La Carte and Diann at The Thrifty Groove for Thrifty Things Friday.

  3. You are great at presentation, and I'm sure it was most delicious! How would you like to come and cook for me once in a while? We're close to the Great Smoky Mountains, and you could spend some time seeing the sights.... :-) I do like Mexican food, but it is not a fave of my hubs, so we don't do it very often. Oh, well.... :-(

  4. I like only certain Mexican food dishes like ones with lots of cheese, fajitas and tacos or taco salad. Your dish looks very good and I'm sure you saved a lot of money.

  8. I am so sorry but Mexican food is not one of my favorites at all. I dislike refried beans, tortillas of any kind and so on. I'm happy you and your hubs enjoy it....sounds like a fast and inexpensive meal!

  13. What a tasty meal using what you had on hand. I love Mexican food and anything with avacados is for me. When our boys were still living at home I made tacos at least once a month. My younger son, especially, stillloves Mexican food. I always told him it was because he was born on Cinco De Mayo; May 5th. ha hA

  16. My kids aren't always happy but I often try to make due with what's on hand rather than always running to the store. Even if it means soup every day. :) Best wishes, Tammy
