Lots of fresh fruit and veggies fill supermarket shelves and farm stands these days.
They make delicious fresh salads and snacks.
For lunch recently, I served chopped lettuce with cold asparagus spears, left over from the previous night's supper, dried tomato strips, pieces of extra sharp shredded cheddar cheese and hard boiled eggs.
Then, the next day, we had arugula, spinach and spring lettuce with slices of cold chicken, chick peas, sliced roasted beets and fresh feta cheese, (the kind that comes swimming in a brine in a plastic container with lid.)
Desserts frequently consist of slices of melon, fresh strawberry slices and raspberries. Mmm mmm mmm

Susan, these are great pictures of great food! My favorite seasonal salad is spinach with strawberries! I could eat that all day!

ReplyDeleteOh, this all looks so yummy, Susan. I would have to say that green salad with balsamic vinegar is my favorite. I eat it sometimes when we have Italian food.

I love any kind of salad..have it for lunch during the school year at least there times a week. Trader Joe's has luscious salads...I like vinegar and oil on mine..that's the best dressing.
ReplyDeleteI enjoy salads, too, but my favorite is not necessarily a summer salad. We don't go to Outback Steak House often, but they have a bleu cheese/pecan chopped salad that is absolutely wonderful! They toast the pecans first, which enhances the flavor---as if pecans need any enhancement---and the salad is served with a house dressing of oil and vinegar, with just a touch of sweetness. Add a few chunks of real bleu cheese with all the veggies chopped so all the flavors meld perfectly, OH MY GOODNESS!!! I'd better stop talking about it! Your asparagus looks delicious!
