Meal in a Hurry




Some nights the thought of cooking is very unappealing.

So keeping it simple helps.

The other night hubs and I had a nice salad of organic baby greens mixed with organic arugula. Now I love the taste of arugula, do you?


Carrots and chick peas were tossed in. Dressing was a simple vinaigrette of lemon juice, olive oil, Parmesan cheese and a sprinkle of salt and pepper. Delish!




Out of the freezer and into the frying pan came some of Trader Joe's delicious orange chicken.  



It was served with rice to which capers had been added.



It all took about 20 minutes and after the dishes were washed, it was off to book club!

ARE THERE  TIMES WHEN YOU DON'T FEEL LIKE COOKING?  IF YES, WHAT DO YOU DO?

  4. Your food looks delicious! Most nights I don't want to cook for the two of us so I get really creative. Salads about two nights a week and then lots of veggies and a little meat here and there.

  6. Don't feel like cooking? Cereal or scrambled eggs are on the menu or take out for me. I also have some PF CHANGS frozen meals which are delicious.

  7. That salad looks delish! I love chick peas in a salad.

    When I don't feel like cooking, eggs are always a great thing. Also, chicken sandwiches if there is some chicken leftover, or I'll cook large in advance so we can have leftovers and no cooking for two or three days. :)

  8. More and more I do not want to cook! I do want the comraderie of a meal though. My problem is here a plate must address Chron's disease, diabetic needs, and gluten free if possible. Not a lot left to make nice meal from!!!

  9. That stuff looks great! My wife is a really good cook, so we rarely eat out. When we do, we like places that have good food. Trader Joe's looks like a good candidate.

  10. Oh, dear! I rarely have a time when I don't want to cook. Oops! I spend far too much time in the kitchen, I know! Haven't ever bought this chicken from Trader Joe's, though I've certainly brought home lots of other treasures.:)

  11. We take it in turns but when nobody wants to cook we have baked beans on toast or a sandwich.
