Veggies for Supper
I don't know about you, but some nights I honestly don't feel like cooking.
After a recent trip to a farmers' market and stocking up on a lot of fresh veggies, the decision of what to make for supper came quite easily.
Veggies!
Sweet Sue corn on the cob, yellow wax beans boiled and then lightly fried in butter, and a salad with sweet cut up cherry tomatoes, chickpeas and chopped onions in a lemon vinaigrette made up the feast.
I saw an easy way to cook corn on the cob. You pop it into the micro, husks and all, after cutting off one end. Set the timer for eight minutes.
When the time is up, the corn slips easily from the husks and each piece is ready for a little butter and salt.
Yum yum yum. Lickedy split and yummy, too!

When it's hot and everyone is sick of regular salads I often make vegie salads only thing I now cook most onions the raw ones don't agree with me.

Today I made veggie stir fry for dinner but I did add chicken breast to it. I love Trader Joe's frozen stir fry veggies...I just make a sauce to go over it with garlic, ginger, soy sauce, dry mustard and a bit of oil..yum yum. I would love corn on the cob and the beans but do not like chick peas...sorry!

Yes, I do enjoy veggies sometime for supper, particularly at this season when things from the garden are ample.
