Quick and Yummy Salad


I'm determined to eat more salads as main entrees. 

They are good for us and healthy.

There's a huge variety of vegetables we can use.

It just makes sense.

Plus, I want my pants to fit better. 


I know, I know, one must combine walking more with eating healthy to see results. I can do that.

Right now, I swim two to three times a week but it's not enough.

The salad in this blog has lettuce,  cold cooked asparagus (yum), dried tomatoes, hard boiled eggs and pieces of cheddar cheese.  

My favorite dressing is olive oil mixed with lemon juice, grated lemon peel, salt and pepper. 

Sometimes I add a little chopped garlic and a touch of sugar.

Do you use beets? I hear they are extremely good for you. I try to eat them, but they are so earthy!

Add a little touch of Tabasco sauce in your dressing - gives it a little zip!

I may be old fashioned but I just like vinegar and oil on my salads...any kind of vinegar and olive oil usually. Trader Joe's has fabulous salads that I take for lunch when school starts.

I really don't need any dressing on my salad. I will just drizzle olive oil over it, and that's enough for me.

Swimming is much easier on the joints, so the doctor told me. It would be ideal if I were a swimmer.

Hello from Spain: I love the salad. To prevent weight gain is a typical dish in my country. Very rich and low calorie. Almost every day I eat salad. My favoritta is surimi salad, lettuce, tomato and olives. A light dish. Keep in touch

Such a great idea! I love this one salad I get a a local restaurant which has strawberries, greens, dried cranberries, feta cheese, candied pecans, cukes and a raspberry vinaigrette. To die for! Kit

I eat a salad every day and make it interesting as well. However, since I'm a Vegan, I don't eat dairy.

I use "Leslie Sansone" walking at home DVD that you can also find on YouTube and you don't need a gym to use a treadmill. I like using my pool to exercise as it is easy on my old bones!

Keep up the good work. You are doing great.
