In past years, while raising children, baking was a very frequent happening.
It's definitely not a thing of the past but these days, baking is done less often.
We all know that sugar is not good for us and extra calories are definitely not needed.However, last week's baking session centered around a pineapple upside down cake.
The "new to me" recipe called to make it in a frying pan! I used a cast iron one.
The cake was not a high riser but it tasted quite good.
The worst part of the cake came when it was time to flip the burning hot frying pan over on to a plate.
I could have used an extra pair of hands but since there were no extra hands, it was necessary to "make do."
The cake eventually came out onto the plate and there was no catastrophe doing it.The recipe came from one of my very oldest cookbooks. I had just never tried it before.
The cake went to my daughter, who loves that kind of dessert.
If you like pineapple upside down cake, it's worth a try.

Haven't had pineapple upside down cake in ages. I'm glad it turned out good, and how thoughtful to give it to your daughter. And that looks like the Pioneer Woman plate you served it on, so pretty. I am always baking something in my kitchen. I've always enjoyed baking more than cooking. ; )

Well my baking this week was of blueberry muffins. I use real blueberries in them and they came out great. I'm not a fan of anything with pineapple but I know your daughter loved your creation ....happy baking.
