Celebratory Dinner


Today in the USA is the annual Martin Luther King Jr. holiday.
I would have loved to have met Mr. King.
 He fought hard for racial equality and justice.  
He even gave his life while fighting for the cause. 
But his mission didn't end when his life ended so tragically and through violence.
It can be carried out and continued through others who believe as he did----that we are all created equal no matter the color of our skin. 
We all deserve to live our lives to the best of our abilities and achieve success while living free and happy.
When we see a wrong, we do not keep silent.
We work hard to right the wrong.
The fight for justice and racial equality will continue until Mr. King's dream can finally become reality for all.

Now, today's blog post:

Special occasions often deserve special dinners.

For a recent anniversary celebration in our family, I hosted a special dinner.

Main meat was a sirloin roast rubbed with a half package of a dry mix used for baking potatoes.

It turned out really scrumptiously.


Rather than make gravy,  just the "juice" from roast was poured over the meat.

Also served were rice, beans, a salad with balsamic dressing, mushrooms and onions, and buttered  rolls.  




Oh, and baked potatoes that had been removed, mixed with butter and cheddar cheese, and returned to their skins.  Delish! 


Dessert consisted of vanilla cupcakes with cream cheese pink frosting.

Didn't get a photo of the finished product but you get the drift.





Of course, there was a gift given to the happy couple.


 There was a bit of remembering,  memory-making, and, of course, love.
