Caramel Apple Muffins





Remember that cute little children's song about the Muffin Man who lives on Drury Lane?

Well, muffins are a fun and easy thing to make.


At this time of year, caramel apples always come to mind.

Now caramel just about anything is great and  sweet caramel covering on a tart apple is the best!

 So when seeing a recipe for Caramel Apple Muffins in a new muffin-shaped mini muffin book, it sounded intriguing.




It required chopping up the little squares of caramels----3/4 of a cup of them. Whew!

The apples in the recipe are also finely chopped.


 Have shared the muffins (as well as some chocolate chip cookies) with a few people. 


 My daughter said the texture of the muffins was  "dense" and I agreed with her.

 But they do have nice little bites of apples and bits of caramel which are quite tasty in a muffin.
