Luckily, chickpeas are very appealing to me.
The other night, I drained and then tossed some with baby peas.
To make the dressing, I squeezed a half a lemon, added a few tablespoons of olive oil, sprinkled in some cayenne pepper and Parmesan cheese, and voila!
Yumminess personified.
This is a nice little salad and I had it for a meal.

How timely. I bought chickpeas for hummus...DH did not like at all. I see more cans on the shelf and wondered...now I have a recipe to try.Thanks!
Oh my, this is an excellent recipe. I love chickpeas. I usually soak them the day before and then cook them until tender and eat them straight or with a little bit of lemon and salt. I've never had them with green peas and parmesan cheese. I will have to try this recipe out. Thanks Susan!
Okay, made it for lunch. Great. I used Balsamic dressing and pecorino cheese...great new salad for keeps!

What a great recipe! A can of baby lima beans might be good to add. I just saw a similar recipe with a pesto dressing. This is perfect for summer days.

NO..do not like chick peas in any shape or form or recipe. You enjoy them though so good for you!
