Fourth of July Birthday Cake


Talk about a lovely, colorful and delicious cake, my niece made one for her mother's birthday which just happens to fall on the Fourth of July.

My sister's other daughter hosted the party which included succulent lobsters, clams and way too many other yummy things to list here. 

She and her hubs did a fabulous job!
   

The cake was a winner, both in looks and taste.

My niece was up until almost midnight making the cake the night before the party.

She said she ran out of frosting to put between the layers so she substituted raspberry jam instead. 

What a great idea. It really added even more flavor to an already luscious cake.

This niece also made the cannoli filling served with pizzelles.  Wayyyyyy too much yumminess for words (or waistlines).

Oh, the cake looks fabulous! And I love the idea of canolli filling in pizzelles! I don't care for the traditional canolli cookie but love pizzelles and even have some in the freeze from a recent batch I made.

Well the birthday party you went to sounds like you had a great time. That is a lot of wonderful fun and food. I think what I like best is the getting together of the friends and the cake! lol

What a great looking cake! I'm know it was very yummy too. I always have a yellow cake with raspberry filling between the layers and buttercream frosting on top for my birthday. It has been my favorite for years. Makes me want to have a piece right now. Don't want another birthday quite yet tho.....
