Burritos for Breakfast! Ole!


 Burritos are kind of like folded sandwiches with a Latin twist.

Tortillas are flat circles of dough. There are white flour tortillas as well as corn.  For the breakfast shown today, I used  white flour tortillas.


Burritos come in a variety of fillings including chicken, beef, hamburger and so forth.

Breakfast burritos are absolutely delicious.  Recently, I made them with bacon, eggs, potato cubes, onions, little tomatoes and rice, for good measure.


 I bought thick bacon, cooked it until it was crispy, then crumbled it into little pieces.  Lightly fried the onions in a small amount of oil. Then I added the bacon bits.  


 I had peeled and cubed a few potatoes and  cooked them in salted water. After they were cooked, I drained them and added them to the bacon and onions.  Wanted them to brown a bit.

In a bowl, I cracked 7 eggs, figuring one for each female guest and two each for the males. 

The rice boiled while the other stuff fried in the pan. Good smells were emitting from the kitchen!


To the onions, bacon bits and potato cubes,  I added the eggs that had been beaten with a little half and half. 

 Then I sprinkled in a big handful of cut-up muenster cheese, a few cut up grape tomatoes, and the rice.

When everything was cooked and mixed together, into the warm tortillas they went. Then, I carefully rolled them up and put them on a plate. Guests ate them with hot sauce. Yum yum YUM!



Also served halved orange slices sprinkled with cinnamon sugar plus coffee.

I have had burritos and I do like them. But what intrigues me is putting cinnamon and sugar on oranges - what a great idea!

I do enjoy a burrito now and then, but not usually for breakfast. For me, it's hard to beat the ground beef or chicken filling that we get later in the day! Ole! Your table certainly looks inviting, and I also love the idea of cinnamon sugar on the orange slices! The important thing is that your guests enjoyed what you served them, and I'm sure that they did!!

My hubby loves when I make him breakfast burritos, except I do veggie sausage and add scrambled eggs with a little cheese. I must say, your tablescape is lovely and so festive. I didn't know anyone else liked cinnamon/sugar on their oranges--we really are twins separated at birth:-D

Yes, we have had burritos. The last ones were Black Bean Burritos. With a vegetarian daughter, they are a hit! I enjoy breakfast burritos, too.

We have nice sunshine here today, the first time in several days!

Have you heard of Amy's frozen products? They are organic, very tasty and have yummy breakfast burritos with black beans. All of their products are really delicious!

As for the women in the shelter, they are Ehtiopian girls who have been brought to this country to be maids but want to leave because of abuse or other reasons. Unfortunately when they sign on with a family, they are committed to 2 years, so when they try to break that contract, there is usually a court case. They can't just leave -- they have to flee to their Embassy to seek help. The Embassy has about 400 girls who want to leave now. Conditions are awful. The Salvation Army really can only take about 35 girls at a time, but they usually have about 50. It's really a very sad situation. So any little way I can help is a good thing.

Not a big fan of burritos but I think they would taste extra good if I was sitting at your darling table setting to eat them. I will definitely try the orange slices with cinnamon sugar...yum

Lovely table setting and yummy menu! I've never had a burrito, but have tasted tacos. Most of this food has cheese, which I can't handle.

MY son would have loved to have been at your breakfast. I do not care for tortillas at all...I'm not a fan of any Mexican food.
