Lunch On-the-Quick




When a dear, long-time friend was passing through town and told me she was coming for a short visit one recent day, I whipped together a quick lunch.

 

Using my favorite dishes in the Old Country Roses pattern and red glasses I got for Christmas were part of the fun. 

Of  course, little votive candle burned in a red glass holder, near a recently made centerpiece. (If interested, you can read about it here.)



To make curried  chicken  salad, I mixed chicken pieces with raisins, walnuts, apple chunks, chopped  celery and onion and added mayonnaise mixed with curry powder. 

Beds of lettuce shreds anchored the salads.

Luckily, I had some very special hibiscus tea in the tea drawer.

Its color is ruby red and it tastes like fresh flowers!  Yummy.

Best of all at the lunch, of course, was seeing my beloved friend.

Good morning Susan...have had my friend here, so haven't been posting or blogging much. Your lunch looks delightful with all the trimmings. SO pretty.
I made a chicken salad almost like your's the other day, but I use Mango chutney too. Try it sometimes...just a bit more flovor.

Well I would make chicken salad - no curry. Tomato soup and grilled cheese. Something like that. You table scape is beautiful.

I would make some kind of salad on the quick too. Not with curry though. I like tuna melts with some kind of soup. Love your table settings! For dessert I would have fruit cup or ice cream.

Your table setting was so pretty and perfect for February. I'm sure the curry chicken salad was delish!

I always like something hot on the cold and snowy days of February; perhaps some butter bean soup which is a cinch to prepare and very healthy and tasty. Of course, grilled cheese or crackers and cheese or cheese bread would go so well with any soup. You can see I like cheese. Yes, that's it, soup and cheese! For desert? A piece of good chocolate or hot chocolate with real whipped cream. Yum....

Your lunch sounds nice for whipping it up quickly. I think little cucumber sandwiches with a simple soup and a quick bread or cake for dessert with fruit would definitely be the easiest things to pull together. Have a great week. Tammy
