Chrissie's Raspberry Meringues



How many times have you wracked your brain trying to think of what kind of food offering you could bring to a party?

Or what kind of hostess gift you can give without spending a wad?

Raspberry meringues might be just what you are looking for!

A very dear friend, Christine, made these and I thought they looked fabulous.

So I made them for a recent open house. (Thanks, Christine!)

She uses regular Cool Whip.   I found a new product in the supermarket, Cool Whip Frosting, and used that.

Next, find meringues, also in the supermarket.  They come in a see-through plastic tub.

Then, select fresh raspberries. 

I never buy any brand other than Driscoll's of California. 

They always look and taste great and hold up well.

Using a silver tray, I put tape on the bottoms of paper doilies to help secure them to the tray.



On each little meringue, I placed some of the Cool Whip frosting with a knife. (Christine pipes Cool Whip through a decorative tip but I took the easy way out.)

Perfect!

Fast!

 And no baking!





Make these  the next time  you are stumped at what to bring to a par-tay!

Hey Susan I like the fact that you used California raspberries. I buy them just about every week at my local supermarket here in So Cal...love them. I have always loved raspberries and these are almost as good as Dad's garden ones. Yum!

Aww.. I want themnow Susan! Looks so so yumm! So this Cool Whip kind of becomes very thick? We don't have such in India... can I make something of that sort myself? May to whip cream?

Well, It seems like I am going to be a regular visitor to your wonderful blog. You know -just by looking at your delicious recipes, it makes me so hungry...
The raspberry treat looks so yummy. I love to look at it.
I also love blueberries, strawberries, and most fruits.
My reply to your question is, I'll offer my guests "EMPANADAS & FLAN con DULCE DE LECHE."
I can't find the translation for those Spanish words though.
Every time guests come to my home, these treats are the ones I offer to them. It is easy to buy them in the store.
I hardly cook, Doctor Paul does.
He cooks Barbecues on Sundays.
His cooking is very simple and sort of boring. We are on a diet.
