How Sweet It Is...


A good new year's goal is to lesson, (or kick completely), the amount of sugar that one ingests.

That means there are only a few days left to imbibe.  (hee hee)

The dessert shown at the top of the post is called Pistachio Coconut Delight.  

The recipe came from a swimming buddy.

It's simple to make and really lip-smacking delicious.  

You just mix two cups of sour cream, a package of instant pistachio pudding, 1 and a third cups of flaked coconut, and 1 eight-and-a-quarter ounce can of crushed pineapple.(I drained it and drank the juice).

Mix all together and voila!  You have a delicious, mouth-watering dessert.  

Arrange maraschino cherries with their stems on top for a pretty touch!

I brought it to my niece, Amy's Christmas Eve bash and it got good reviews.

Whose lovely house was that? Very nice. And I like pistachio very much - but coconut - no! lol

That sounds like a very decadent and sweet dessert. I don't often use sugar but when I need sweetener (like for oatmeal) it is usually maple syrup or coconut sugar. Definitely ready for the new year and really hoping it holds a lot more peace and promise.

I LOVE coconut, so I will most certainly make that dessert. Tomorrow I will take down the tree and put decorations away. I am ready for it to be gone.

Oh my, that pistachio dessert looks so good, Susan. The cherries on top add an extra zing to it. Well, Christmas is over, and I'd love for it to linger on in my house, but I just took my decorations down today. I love this precious baby Jesus figurine.

Love the décor but wouldn't touch the dessert you brought. Not a fan of coconut or pineapple..ha ha. Each to his own right? I am sad the holidays are coming to an end. I loved being with my two adult children this year. I'm very grateful.
