Fragrant, Spicy Apple Cake




Since it's apple picking time in New England, it's time to make an apple coffeecake. Usually, I use a sour cream coffeecake recipe but this time tried a new recipe.

It called for three spices. The one teaspoon of ground cloves turned out to be too much for me. It seemed to overpower the cinnamon.



















I use only "Omega 3" eggs, produced without hormones or antibiotics.

Despite spraying the pan with non-stick spray, the cake still stuck. It came out with a big chunk missing.




A light dusting of confectioners sugar helped cover the mishap.




A glass cover immediately topped the cake to prevent random snacking.



Next time, however, it's back to the sour cream coffeecake recipe. Sometimes, the familiar is better than the new.

Hi Susan. Just at first glance, my mouth was watering! I could even smell the aroma! Mmmm! It's funny to see this post this morning, because I just bought apples over the weekend to make an apple pie today! It's autumn....it's very chilly here this morning....so that means I feel like baking! :)

Yummy. My late friend's apple cake is the one I wrote about for the latest Chicken Soup book that I am in. Apple Walnut cake is delicious, baked in a 9"x 12" and nibbled on for days.

No I don't bake much... but I have a friend that makes this yummy, gooey, apple caramel surprise thing... mmmmmmm....

This looks and sounds so good, Susan! I hope you have some good tea like Harney's Cranberry Autumn or an Apple Spice to with it! I am not crazy about cloves in general either...

I would have agreed on the cloves. Your cake really did look nice. I actually found an apple cake recipe and made it yesterday - I am going to post it on Monday - I can smell yours from over here. Yum. sandie

I've tried some muffin recipes that stick like that even when you grease the pans -- which is why I usually stick to the recipe I know best that never, ever sticks. A friend at school brought apple muffins to school yesterday -- I had my second one for breakfast this morning. So moist and yummy! I don't think I've ever made an apple cake but the sour cream recipe does sound delish! Hope your day is great. Tammy

Even with the mishap your cake looks delicious. Apple cake is one of my favorite desserts. Maybe the recipe was not to blame for the sticking problem because I have been having problems with Pam. I think they have changed the formula because no matter how much I spray on, things still stick. You now have me in the mood for an apple cake so I might just have to make one soon.------Shannon
