While baking and cooking are usually creative and happy tasks, sometimes I just get plain sick of doing them. It's challenging to come up with new dishes that are satisfying, healthy, economical and tasty.
Recently, I put some chicken thighs in a square casserole that had been coated with cooking spray. Added some onion powder, salt and pepper and popped them into the oven. Meanwhile, I made a quick white sauce with butter, flour, milk, salt, pepper and a dash of cayenne pepper. When the sauce was thick, I mixed some dried marinated tomato strips into the sauce.
Then, the chicken pieces were added to the sauce. Small potatoes were boiled on top of the stove until they were tender.
Little baby cucumbers, found at a farmers' market, were sliced. I mixed vinegar, olive oil, salt and pepper and a tablespoon of sugar together and poured them on top of the cukes.
That's how my maternal Grandmother served them and I always loved them that way.
You know what? The whole dinner turned out really delicious.
