A Tale of Mushroom Soup

Isn't it funny how something we ate as a child still resonates with us when we are adults?

Take cream of mushroom soup.

My dear late mother used to serve it to us as kids.

It was probably Campbell's from a can but we didn't care. 

Its creamy, yummy taste just about tickled my taste buds every time she served it.

Years passed and I hadn't had cream of mushroom soup in a long time.

So recently, I made some at home.

I fried onions and mushrooms lightly in oil;  made a roux with flour, butter, and chicken broth and added it to the onions and mushrooms; and then added a healthy dose of heavy cream.

Besides a bit of salt and pepper, I sprinkled a tiny bit of nutmeg on top of each bowl of soup.

It tasted AWESOME and brought back memories of sitting at my Mummy's kitchen table, slurping up every bite of yummy cream of mushroom soup.




this sounds delightful and delicious. i'm reminded of childhood with a bowl of tomato soup laced with pesto sauce and parmesan cheese.

The one thing I can think of is chili - my mom made the best chili around and I just can't repeat the recipe - yet!

Oh boy I loved my Mom's cabbage soup, beet soup, turnip soup and chicken soup. I definitely make them all today and enjoy them.

Yum, I love homemade mushroom soup. Yours looks delicious!

I still enjoy Campbell's mushroom soup on days when I don't have time for cooking. If I have a couple of mushrooms, I might saute and add them to the canned mix, but straight out of the can works too.

Your cream of mushroom soup looks so good, Susan. I LOVE MUSHROOMS! It's nice to have those sweet memories come back to us from time to time.

My mom used to make enchiladas that were out of this world! And to this day, my daughters make them on special occasions. They are really good. : )
